Green light for asparagus 💚
Raw Nest's new seasonal menu – care day on a plate
Spring in Krakow smells of lilac, freshly brewed coffee and… grilled asparagus. At Raw Nest we enter the season with a green step – literally. Our new asparagus menu is not only a nod to nature, but also to your energy, balance and healthy appetite. Because who said that healthy has to be boring?
Why asparagus?
Because they are the queen of spring. Delicate, slightly nutty, full of vitamins and fiber. They are full of vitamin K, which takes care of our bones and blood clotting, as well as vitamin C, which supports immunity. Additionally, asparagus is a low-calorie snack, full of fiber, which aids digestion. And on top of that, they have natural detoxifying properties - they help get rid of toxins from the body. They support the digestive system, improve mood and - let's not be afraid to say it - look simply divine on a plate.
Asparagus is vegetable haute couture. That's why it deserves the main role in our seasonal insert. We combine it with our own additions, seasonal products and creamy sauces. Everything you love about Raw Nest: naturalness, expressiveness and zero boredom.
Lemon Treat – a classic that comes back like a favorite song
Last season it was an absolute hit. And let's be honest - you missed it. Lemon Treat is delicate grilled asparagus arranged on a creamy cashew cheese, fried tempeh, crispy quinoa and roasted nuts in maple syrup with chili. All of this is drizzled with leek oil. This is a dish that tastes like a brunch in the sun with your best friend.
It's more than lunch. It's a state of mind.
Veggie Fest – a colorful feast without rules
Mixed salads, rice quinoa, juicy vegetables, olives with almonds and again – our roasted grains with a hint of maple fire. Add lemon vinaigrette, which awakens the taste buds like the first sip of prosecco on a Friday afternoon. Veggie Fest is a bowl that makes order out of chaos. It combines taste, structure and nutritional value in a neat, very Instagrammable form.
A dish like you – conscious, colorful, specific.
So Salmon – an illusion without a lie
Baked tofu salmon is our tribute to those who like deep flavor without harm. Add potatoes, lettuce, cucumber and creamy lemon cashew cheese. Starring asparagus, which plays more like a main actor than a background.
You don't have to pretend - you just choose better.
No More Fish – a plant-based rebellion with character
Smoked carrots, grilled asparagus, avocado, cabbage and sesame. Plus a mustard-maple sauce that combines sweetness and spiciness in one brilliant balance. This dish doesn't want to be a fish. It sprints past it. It crunches, melts and stays in your memory for a long time.
No More Fish is a powerful choice.
Eat good · Feel good – in practice
At Raw Nest, we believe that food can be a form of self-care. No moralizing, no calorie calculator. But with respect for the ingredients, the body, and the planet.
Our asparagus dishes:
-
are 100% plant-based and full of protein,
-
based on local and ecological products,
-
made from scratch, without half-measures,
-
packed with care – only in glass or compostable packaging.
Locality that tastes good
Most of the vegetables come from farmers near Krakow. We make our own cashew cheese. Granola? Baked every morning. We don't just eat seasonally - we live seasonally. When the first asparagus appears, we know it's time for a new chapter. Healthier, brighter, greener.
Who is all this for?
For you if:
-
you have a full schedule and a head full of ideas,
-
you want to eat healthy but don't feel like compromising,
-
you love style and taste – and you know that one does not exclude the other,
-
you want to do something for yourself, but you don't like pressure.
